Boozy Plums

Plums and peaches are in season now in the Southern Hemisphere and there is a large variety of them in the supermarkets. I always feel there should be a way of holding on to the fruity bounties of summer for those days in winter when it goes dark at 5 o’clock and the wind and the rain makes it hard to think there is a sun out there at all. And now I have a way of doing that! I think you guys will like this one.

This recipe could be done with any seasonal fruit or even with apples if that is all that there is in the house. I think this could be adapted to suit different spices such as star aniseed and black pepper, cloves and bay leaves. The wine cooks down leaving a lovely
grape taste and making it suitable for children of all ages.

YOU WILL NEED:

10 blood plums

3 tablespoons of brown sugar

1 Cup of red wine

1 cinnamon stick

1 teaspoon vanilla extract

3 tablespoons of honey

YOU WILL HAVE TO DO:

Stir to combine. Cook on a medium flame for around 30 minutes, or until it is bubbling and the plums are soft. If you like, remove the plums from the liquid after they are softened, and boil to reduce the syrup and make a velvety sauce.

Eat by the spoonful, go on! You know you want to! Or drizzle over your oats, porridge and cereal. This is great with ice cream as well. Pancakes should go well too. In fact, make this, and then try out the combination you think will go best.
